Super Bowl parties are super-fun, but the food served at them can be super-fattening! Instead of potato chips and pizza bites, consider serving these five easy-on-the waistline treats.
1. Tomato Basil Bruschetta
Prep time: 15 minutes
Bake time: 10 minutes
Total time: 25 minutes
Ingredients
- 8 plum tomatoes
- 2 teaspoons minced garlic
- 1 tablespoon extra-virgin olive oil
- 1 teaspoon balsamic vinegar
- 10 minced basil leaves
- Pinch of salt and pepper
- 1 whole wheat baguette
- 1/4 cup olive oil
Directions
First blanch and peel the tomatoes. To do this, bring two quarts of water to a boil and, once the water is boiling, remove the pot from the heat. Make shallow cuts at the tip ends of the tomatoes, and place them in the hot water for one minute. Remove the tomatoes from the water, and allow them to cool down. Then peel off the tomato skins, cutting out the stem base. Cut the tomatoes in quarters, squeezing out most of the juice. Preheat your oven to 450 degrees. Finely chop the tomatoes and place them in a bowl, mixing in the garlic, one tablespoon extra virgin olive oil, and the balsamic vinegar. Then stir in the basil and season with salt and pepper. Slice the baguette and toast the slices using the rack of your oven. Before toasting the slices, brush one side with olive oil. Once toasted, arrange the slices with the olive oil face up. Gently spoon the bruschetta mixture on each slice right before serving.
