Instapots, or pressure cookers, are perfect for the winter. You can cook a full meal in under 30 minutes, unlike crockpots that take at least a few hours. Here are three super easy Instapot recipes for wintertime:

1. Chicken enchiladas1. Chicken enchiladas

Ingredients:

  • 1 tablespoon vegetable oil
  • 1 cup diced onion
  • 4 cloves of garlic minced
  • 1 jalapeno seed minced
  • 1 cup chicken broth
  • 2 eight ounce cans of tomato sauce
  • 2 tablespoons chili powder
  • 1 tablespoon sugar
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 1/2 pounds boneless skinless chicken breast
  • 2 tablespoons fresh cilantro
  • 12 corn tortillas
  • 8 ounces sharp cheddar shredded
  • 8 ounces Monterey jack cheese shredded
  • Sour cream

Directions:

  • Set the Instapot to Saute and add the oil
  • Saute the onions, garlic, and jalapeno until soft
  • Add chicken broth, tomato sauce, chili powder, sugar, cumin, salt, and pepper to Instapot, and stir to combine
  • Add chicken breasts to Instapot, close lid and set pressure release valve to Sealing
  • Set the Instapot to High Pressure via Manual Mode for 10 minutes
  • While chicken breasts and sauce are cooking, shred the cheese and combine and prepare tortillas
  • Preheat oven to 400 degrees
  • Brush tortillas with vegetable oil, and spread on the baking sheet
  • Heat in the oven for 5 minutes until soft
  • Remove chicken breasts from Instapot and allow to cook
  • Shred the chicken breasts
  • Stir in fresh cilantro into enchilada sauce
  • Spray a baking dish with cooking spray
  • Spread bottom of baking dish with 1/4 cup enchilada sauce
  • Evenly divide 1/2 of enchilada sauce, 1/2 cup shredded cheese and all of the shredded chicken among 12 corn tortillas, roll and place seam side down in baking dish
  • Pour remaining enchilada sauce over rolled enchiladas and top with remaining cheese
  • Cover dish with foil and bake at 400 degrees for 30 minutes
  • Serve with sour cream

2. Mac and cheese2. Mac and cheese

Ingredients:

  • 1 pound uncooked whole wheat pasta
  • 4 cups water
  • 3 tablespoons butter, cut into small pieces
  • 1 teaspoon salt
  • 2 1/2 cups shredded sharp cheddar cheese
  • 1/2 cup whole milk
  • Serve with additional cheese on top

Directions:

  • Place the whole wheat pasta, butter, water, and salt into an Instapot
  • Cook for four minutes using the Manual Function
  • Once cooked, stir in the cheese and milk
  • Add more seasoning and liquid as necessary

3. Beef pho3. Beef pho

Ingredients:

  • 14 ounces rice noodles
  • 1 tablespoon extra virgin olive oil
  • 1 large yellow onion, halved
  • 1 2-inch piece ginger cut into 1/4 inch slices
  • 3 cardamom pods, lightly smashed
  • 1 cinnamon stick
  • 1 tablespoon coriander seeds
  • 3 star anise pods
  • 5 cloves
  • 1 fuji apple cut into chunks
  • 1/2 cup chopped cilantro
  • 18 ounces beef
  • 3 tablespoons fish sauce
  • 1 tablespoon sugar
  • 8 cups water
  • 1 1/2 cup kosher salt
  • Toppings, such as lime, jalapenos, red onion, fresh herbs, bean sprouts, and sriracha sauce

Directions:

  • Soak the noodles in a large bowl of warm water for 30 minutes, and set aside
  • Add oil to Instapot noodles and select sautee option
  • Once hot, add the onion and ginger, cooking until slightly charred
  • Add the cardamom, cinnamon stick, coriander, star anise, and cloves and cook for one minute until fragrant
  • Add the water to the pot along with apple, cilantro, beef, fish sauce, and sugar
  • Secure the lid
  • Select Manual and cook at high pressure for 15 minutes
  • Turn off the Instapot and wait 10 minutes
  • Remove the beef from the pot and set aside
  • Strain the broth and season with salt and pepper
  • Separate the meat from the bone, and divide among four bowls
  • Strain the noodles, and divide them among 4 bowls
  • Top each of the bowls with the broth and some toppings
