  • 1/2 cup chocolate chips
  • 1 1/2 tablespoons butter
  • 1/4 cup prune purée
  • 1/2 teaspoon instant coffee
  • 2 teaspoons vanilla extract
  • 1/4 cup brown sugar
  • 1/2 cup stevia sweetener
  • 1 egg, beaten
  • 1/4 cup cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 cup all-purpose flour

Directions

  • Preheat your oven to 325°
  • Coat a 12-cup muffin tin with some baking spray
  • Combine chocolate chips and butter in a medium bowl
  • Microwave chocolate chips and butter on “high” setting for one minute and whisk them
  • Then add prune purée, instant coffee, vanilla extract, stevia sweetener, and brown sugar
  • Stir these until smooth
  • Stir in the beaten egg as you add cocoa powder, baking powder, and flour
  • Spoon two tablespoons of batter into each muffin tin
  • Bake for 10 minutes
  • Let cool on a wire rack for 15 minutes

Each serving has 100 calories.

Ingredients

  • 2 pieces of dark chocolate
  • 1/2 tablespoon peanut butter

Directions

  • Melt one piece of dark chocolate
  • Pour into the bottom of a mini-muffin wrapper
  • Place wrapper in the freezer for a few minutes to allow the chocolate to cool and harden
  • Top the chocolate at the bottom with peanut butter
  • Melt the second piece of chocolate and place it on top of the peanut butter
  • Chill again until solid

This recipe makes one serving of 98 calories.

Ingredients

  • 1/4 cup brown sugar, 1/4 cup maple syrup
  • 4 tablespoons softened butter
  • 1 tablespoon molasses
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon baking soda
  • 8 cups popcorn, air-popped
  • 1 cup dry-roasted peanuts

Directions

  • Preheat your oven to 200 degrees
  • Spray a baking sheet with cooking spray
  • Combine the brown sugar, syrup, butter, molasses, and salt in a saucepan
  • Bring to a boil over high heat
  • Reduce the heat to medium and cook for five minutes, stirring occasionally
  • Remove from heat, and add the vanilla and baking soda until combined
  • Mix the popcorn and peanuts in a bowl
  • Pour the sugar mixture on top until coated
  • Spread the popcorn mixture onto the baking sheet
  • Bake for 45 minutes
  • Stir occasionally

  • 1 cup canned pumpkin
  • 1 cup shredded carrots
  • 1/2 cup sugar
  • 1/3 cup dried raisins
  • 1/4 cup canola oil

  • 1 cup whole grain pastry flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup chopped walnuts

Directions

  • Coat a 13”x9”x2” baking pan with cooking spray
  • Preheat your oven to 350°
  • Combine pumpkin, carrot, sugar, raisins, oil, and eggs in a bowl
  • Stir until blended
  • Add flour, baking powder, cinnamon, baking soda, and salt until blended
  • Pour mixture into the pan
  • Sprinkle mixture with walnuts
  • Bake for 25 minutes

  • 3/4 cup sugar
  • 1/4 cup corn syrup
  • 1/4 teaspoon salt
  • 1 cup dry-roasted peanuts

Directions

  • Coat a baking sheet with cooking spray
  • Combine sugar, corn syrup, and salt in a saucepan
  • Bring to a boil, stirring occasionally for five minutes or until the sugar is dissolved
  • Add the peanuts, margarine, and vanilla extract
  • Mix these until the margarine is melted
  • Remove from the heat
  • Stir in the baking soda
  • Pour mixture onto the baking sheet
  • Spread the mixture over the entire sheet with a wooden spoon
  • Let mixture cool for 1 hour

Each serving contains 240 calories.

6. Cinnamon Gelato

Ingredients

  • 1 cup sugar
  • 1 cup half-and-half
  • 2 1/2 cups one-percent milk
  • 2 1/2 tablespoons cornstarch
  • 1/2 cup one-percent milk
  • 1 teaspoon vanilla extract
  • 3/4 teaspoon cinnamon

Directions

  • Mix together the sugar, half-and-half, and 2 1/2 cups of milk in a saucepan over medium heat
  • Whisk together the cornstarch and the 1/2 cup milk in a bowl
  • Stir mixture into a pan
  • Boil for two minutes
  • Strain mixture into a bowl
  • Add vanilla and cinnamon
  • Chill until cold
  • Process in an ice cream maker
  • Freeze for two hours

This recipe has 150 calories per serving.
