8 Lite Avocado Toast Recipes for a Quick, Yummy Bite

Avocado toast is the hottest new breakfast food — and for good reason. It’s an easy-to-make nutritional powerhouse. Avocado has protein and healthy fats, and toast is high in fiber. The two together keep you full for hours on end. Plus, avocado toast is high in key nutrients such as vitamins B, C, E, K and potassium. Here are eight avocado toast recipes for a yummy meal on the go.

1. Mexican Grilled Corn Avocado Toast

Time: 20 minutes

This yummy avocado toast has south of the border sabor to spare.

Ingredients

  • 2 ears sweet corn, grilled
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 1/2 teaspoon smoked paprika
  • Pinch of salt
  • Pinch of pepper
  • 2 avocados
  • 1/2 a lime
  • 4 slices whole grain bread
  • 1/2 cup queso fresco cheese
  • 3 tablespoons chopped cilantro

Directions

Rub the ears of corn with olive oil. Then place the ears on the grill and cook until the corn is charred. Remove and let cool slightly. Mix together the butter, paprika, and salt and pepper, and butter the corn. Slice the kernels from the cob into a bowl.

In a bowl, mash the avocado with salt, pepper, and lime juice as you toast your bread. Spread the mixture the toast and then top with the corn, some cheese, a sprinkling of cilantro, and some smoked paprika.

2. Basil Pesto Avocado Toast

Time: 15 minutes

This easy Italian twist on classic avocado toast is molto bene.

Ingredients

  • Basil pesto
  • 3 slices spelt toast
  • 1 sliced avocado
  • Microgreens
  • Black pepper
  • Extra virgin olive oil

Directions

Slice the avocado and toast the bread. Spread the basil pesto on the toast. Then spread the avocado mash on it and top with the microgreens. Drizzle extra virgin olive oil on it and sprinkle it with black pepper.

3. Moroccan Fried Egg Avocado Toast

Time: 10 minutes

This exotic variation delivers bold zest.

Ingredients

  • 1 avocado
  • Lemon juice
  • 2 slices whole grain bread
  • 2 tablespoons olive oil
  • 2 eggs
  • Salt and pepper

Directions

Make Moroccan guacamole by mashing up the avocado with some lemon juice and some salt and pepper. fry two eggs in a nonstick pan as you toast your bread. Spread the avocado mixture on the bread and top with eggs. Drizzle with harissa.

4. Miso-Tahini Avocado Toast

Time: 20 minutes

This is a Japanese take on traditional avocado toast.

Ingredients

  • 1/4 cup black sesame seeds
  • 1/4 cup tahini paste
  • 1 tablespoon white miso
  • 1 small garlic clove, minced
  • 1 teaspoon fresh lemon juice
  • 4 tablespoons water
  • 1 avocado
  • 4 slices toasted bread
  • 2 tablespoons black sesame gomasio
  • 2 scallions
  • Dill

Directions

Toast the sesame seeds in a skillet for a few minutes and then set aside. Then grind the seeds with salt. In a bowl, whisk the tahini, miso, lemon juice, and garlic together. Then add the water one tablespoon at a time until the mixture becomes thick and creamy. Refrigerate. Slice the avocados. Spread the miso-tahini paste onto each piece of toast, top with sliced avocado, and sprinkle with gomasio, sliced scallions, and chopped dill.

5. Cucumber Hummus Avocado Toast

Time: 15 minutes

This is a Mediterranean twist on traditional avocado toast.

Ingredients

  • 1 slice multigrain bread
  • 1/2 an avocado
  • 1/3 cup hummus
  • Cucumber slices
  • bell pepper slices
  • Olive oil
  • salt and pepper

Directions

Toast the bread. Mash and spread the avocado with a fork. Spread the hummus over the avocado and place the cucumber and bell pepper slices on top. Drizzle with olive oil and sprinkle with salt and pepper.

6. Avocado Mango Toast

Time: 10 minutes

This tropical avocado toast is sure to brighten your day.

Ingredients

  • 2 sliced whole grain bread
  • 1 avocado
  • 1 golden mango
  • Lemon juice
  • Salt and pepper

Directions

Toast the bread. Scoop out half an avocado and put it on your toast. Then squeeze some lemon juice on the avocado and mush the two together. Slice some mangoes, and place them on top of the avocado. Sprinkle with salt and pepper.

7. Avocado, Black Bean, and Tomato Toast

Time: 15 minutes

This is a Tex-Mex twist on your typical avocado toast.

Ingredients

  • 1 beefsteak tomato, sliced
  • Pinch of cumin
  • 1 tablespoon olive oil
  • 2 slices whole wheat bread
  • 1 small avocado
  • 1/2 a lime
  • 1/3 cup canned black beans
  • 2 tablespoons roasted pepitas
  • salt and pepper

Directions

Preheat your oven to 400° F. Then line a baking sheet with parchment paper and spread the tomato slices out across baking sheet. Drizzle with olive oil and add the spices. Roast for 15 minutes. In a small bowl, mash the avocado, and add the lime, salt and pepper to taste. Stir in the black beans. Smear the toast slices with the avocado mixture and top with sliced tomatoes. Sprinkle with pepitas.

8. Curried Avocado Toast

Time: 15 minutes

You’ll enjoy this East Indian variation.

Ingredients

  • 1 avocado
  • 1 tablespoon curry powder
  • 1 large lime
  • 1 teaspoon salt
  • 2 teaspoons extra virgin olive oil
  • 1 teaspoon mustard seeds

Directions

Soak the mustard seeds in a cup of hot water. Then mash the avocado in a bowl and stir in the lime, salt, and curry powder. Toast your bread. Drain the mustard seeds. Spread the avocado mixture onto the bread, and drizzle each slice with mustard seeds and olive oil.
