5 Pink Treats to Make for Breast Cancer Awareness Month

Pink treat recipes to celebrate breast cancer awareness

October is Breast Cancer Awareness Month, a month dedicated to raising awareness about the impact of breast cancer and raising funds for research. During October and throughout the year, people wear pink ribbons to honor survivors, remember loved ones lost to the disease, and support the goal of one day finding a cure. While breast cancer is the second most common cancer among women, it’s also survivable with early detection. Wearing a classic pink ribbon isn’t the only way you can show your support and raise awareness — you can also bake tasty treats to share with friends, family, coworkers, and neighbors. In honor of Breast Cancer Awareness Month, check out these delicious pink-colored desserts that you can use to celebrate a good cause:

1. Coconut Rice Krispie treats

These toasted coconut Rice Krispie treats are made with coconut oil instead of butter, giving them a delicious coconut flavor.

Ingredients:

  • 2 cups shredded coconut
  • 6 cups Rice Krispie cereal
  • 40 large marshmallows
  • 1/4 cup coconut oil
  • 1 teaspoon coconut oil
  • 1 1/2 cups white chocolate chips
  • Pink sprinkles

Directions:

  • Line a 9×9 inch baking pan with foil and then spray with cooking spray
  • Place the shredded coconut in a saucepan over low heat, constantly stirring for a few minutes until the coconut turns brown.
  • Remove the shredded coconut from the heat and transfer it to a large bowl
  • In the same bowl add Rice Krispies cereal and mix together
  • In another bowl, add the marshmallows and 1/4 cup coconut oil, microwaving for 2 minutes
  • Stir every 30 seconds until marshmallows are melted
  • immediately pour the cereal and coconut mixture into the marshmallow mixture, stirring to combine
  • Pour the mixture into prepared pan
  • Spray your hands with cooking spray and then press to fit
  • Add the white chocolate chips to a bowl and microwave them for 30 seconds to one minute until melted, and then stir until smooth
  • Spread the chocolate evenly over the Rice Krispie treats
  • Cover with pink sprinkles
  • Chill until firm and then cut into bars

2. Pink velvet cupcakes

This is a pink spin on traditional red velvet cupcakes.

Ingredients:

  • 2 cups softened butter
  • 1 1/3 cups sugar
  • Pink food coloring
  • 3 eggs
  • 4 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1 1/2 teaspoons salt
  • 1 cup buttermilk
  • 2 tablespoons Crisco
  • 1 32-ounce bag of powdered sugar
  • Whipping cream
  • Pink sprinkles

Directions:

  • Cream together 1 cup butter and sugar in a large bowl
  • Once it’s light and fluffy, add the pink food coloring
  • Start with a small amount, and then increase until you’ve reached your desired color, blending well
  • Add in eggs, one at a time, beating well
  • Add in 2 teaspoons vanilla vanilla
  • In a separate bowl, combine the flour, baking powder, baking soda, and 1/2 teaspoon salt
  • Add 1/3 of the dry ingredients to the batter and beat until well combined
  • Add in 1/2 of the buttermilk, and beat until combined, followed by another 1/3 of the dry mixture, then the remaining buttermilk, and then finally the remaining dry ingredients
  • Fill paper-lined muffin cups 2/3 full with batter
  • Bake at 350 degrees for 20-30 minutes
  • To make the frosting, in a bowl combine 1 cup butter, 2 tablespoons Crisco, and 2 teaspoons vanilla together
  • Add the powdered sugar and salt
  • Slowly add in whipping cream until you’ve reached your desired consistency
  • Beat for 2 minutes until light and fluffy
  • Spread the frosting on top of the muffins and sprinkle with pink sprinkles

3. Strawberry chocolate chip cookies

These super soft strawberry cookies are loaded with chocolate chips.

Ingredients:

  • 1 box strawberry cake mix
  • 1 teaspoon baking powder
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1/2 teaspoon vanilla extract
  • 1 1/4 cups semi-sweet chocolate chips

Directions:

  • Preheat the oven to 350 degrees
  • Line a large baking sheet with parchment paper
  • in a large bowl, mix together the cake mix and baking powder, and then set aside
  • In another bowl, whisk together the eggs, oil, and vanilla by hand
  • Mix in the chocolate chips
  • Place rounded balls of dough on the baking sheet (each ball should contain about 2 tablespoons of dough)
  • Bake for 10 minutes, and remove from oven
  • Allow the cookies to cool before serving

4. Pink lemonade pie

A refreshing and tangy treat, this pink lemonade pie is a crowd-pleaser.

Ingredients:

  • 1 pre-made graham cracker crust
  • 1 can (14 ounces) sweetened condensed milk
  • 1 container (8 ounces) whipped topping, thawed
  • 1 cup pink lemonade concentrate (thawed)
  • Pink food coloring (optional)
  • Lemon zest for garnish

Directions:

  • In a large mixing bowl, combine the sweetened condensed milk and pink lemonade concentrate
  • Fold in the whipped topping until the mixture is smooth
  • Add a few drops of pink food coloring if you want a more vibrant color, and mix well
  • Pour the filling into the graham cracker crust
  • Chill the pie in the refrigerator for at least 4 hours or until set
  • Before serving, garnish with lemon zest
  • Enjoy!

5. Raspberry cream cheese muffins

These muffins offer a delightful combination of fresh raspberries and creamy cheese with a hint of pink.

Ingredients:

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1 cup fresh raspberries, chopped
  • 4 ounces cream cheese, softened
  • Pink food coloring (optional)

Directions:

  • Preheat the oven to 375 degrees. Line a muffin tin with paper liners
  • In a medium bowl, mix the flour, baking powder, baking soda, and salt and set aside
  • In a large bowl, cream the butter and sugar until light and fluffy
  • Add the eggs one at a time, beating well after each addition
  • Stir in the vanilla extract
