Summer is nearly here. Welcome it with these six fabulous and refreshing cocktails:

1. Watermelon tequila cocktail

Ingredients:

  • 1/4 cup water
  • 1/4 cup granulated sugar
  • 8 cups diced seedless watermelon
  • 1/4 cup fresh lime juice
  • 1 3/4 cups blueberries
  • 3/4 cup fresh mint leaves
  • 1 1/4 cups tequila
  • Ice

Directions:

  • In a small saucepan, bring the water to a simmer with the sugar, and stir over moderate heat until the sugar is dissolved
  • Allow the sugar syrup to cool
  • In a blender, puree the watermelon until smooth
  • Strain the watermelon juice and discard the pulp
  • In a large pitcher, combine the sugar syrup with the lime juice, blueberries, and mint leaves
  • Lightly muddle the blueberries and mint using a wooden spoon
  • Add the watermelon juice and tequila
  • Refrigerate until chilled then serve

2. Strawberry lemon mojito

Ingredients:

  • 8 lemon wedges
  • 24 mint leaves
  • 4 strawberries
  • Crushed ice
  • 8 ounces rum
  • 3 ounces fresh lemon juice
  • 2 ounces agave nectar

Directions:

  • Muddle the lemon wedges with the whole strawberries and mint leaves in a cocktail shaker
  • Add ice and the rum, lemon juice, and sugarcane syrup
  • Shake well and strain into glasses
  • Garnish with strawberries and mint leaves

3. Cucumber honeydew freeze

Ingredients:

  • 1 lime wedge
  • 8 ounces gin
  • 2 cups chopped and peeled cucumber
  • 2 cups chopped honeydew melon
  • 6 ounces fresh lemon juice
  • 1 cup honey
  • 5 cups ice

Directions:

  • In a blender, combine all ingredients together
  • Blend until smooth and pour the drink into glasses
  • Garnish with cucumber wheels and honeydew melon balls

4. Blueberry mint lemonade

Ingredients:

  • 1 cup fresh blueberries
  • 1/4 cup fresh mint leaves chopped
  • 6 cups of water
  • 1/2 cup sugar
  • 1/2 cup fresh lemon juice

Directions:

  • In a large pitcher, muddle the blueberries and mint
  • Stir in the water, sugar, and lemon juice
  • Stir until the sugar is dissolved
  • Chill and serve over ice

5. Basil lime slushie

Ingredients:

  • 8 cups ice
  • 4 cups of water
  • 3 cups fresh lime juice
  • 3 cups lightly packed basil leaves
  • 1 1/2 cups sugar
  • 1 1/2 cups soda water

Directions:

  • In a pitcher, blend the ice with the water, lime juice, basil leaves, and sugar until slushy
  • Pour the limeade into chilled glasses
  • Top with two tablespoons of the soda water
  • Garnish with basil sprigs and serve

6. Cucumber margarita

Ingredients:

  • 2 1/2 ounces cucumber flavored tequila
  • 1 ounce fresh lime juice
  • 1 ounce simple syrup
  • 1 cucumber slice
  • Salt
  • Ice

Directions:

  • Wet the rim of a margarita glass, and dip it in salt
  • Fill the glass with ice
  • Fill a cocktail shaker with ice
  • Add the tequila, lime juice, and simple syrup
  • Shake until well chilled
  • Strain the cocktail into the rimmed glass
  • Garnish with the cucumber slice
