1. Brown sugar pancakes

Ingredients:

  • 2 cups all-purpose flour
  • 2 tablespoons baking powder
  • 1 teaspoon kosher salt
  • 3 tablespoons dark brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 1/2 cups milk
  • 5 tablespoons butter, melted
  • Butter for frying

Directions:

  • Whisk the flour, baking powder, salt, and brown sugar together in a large bowl
  • In a separate bowl, whisk the eggs, vanilla, and milk together
  • Add the wet ingredients to the dry, and mix until combined
  • Mix in the melted butter and stir until combined
  • Heat a griddle to medium-low heat, and melt a small amount of butter on the griddle
  • Scoop out 1/2 cup of pancake batter into the hot griddle
  • Cook until edges are set and bubbles form on top of the pancake
  • Flip and cook until browned
  • Serve warm

2. Chocolate chip banana pancakes

Ingredients:

  • 1 1/2 cups flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1 1/4 cups milk
  • 1/2 cup banana, mashed
  • 1 egg, lightly beaten
  • 1 teaspoon vanilla
  • 1/2 cup chocolate chips, divided

Directions:

  • Combine the flour, sugar, baking powder and cinnamon in a large bowl
  • Stir in milk, banana, egg, and vanilla
  • Fold in 1/4 cup chocolate chips
  • Heat a griddle to medium heat, and then spray with oil
  • Pour the batter onto the griddle, making 3-inch rounds
  • Cook about two minutes or until tops are bubbly
  • Flip the pancake and cook for another minute or until golden
  • Place the pancakes on individual plates and sprinkle with remaining chocolate chips

3. Blueberry pancakes

Ingredients:

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 tablespoon baking powder
  • 1 1/4 teaspoons white sugar
  • 1 egg
  • 1 cup milk
  • 1/2 tablespoon butter, melted
  • 1/2 cup blueberries

Directions:

  • Sift the flour, salt, baking powder, and sugar together in a large bowl
  • In a small bowl, beat together the egg and milk
  • Stir the milk and egg into the flour mixture
  • Fold in the butter and blueberries
  • Set aside one hour to rest
  • Heat a lightly oiled griddle over medium-high heat
  • Scoop the batter onto the griddle, using 1/4 cup for each pancake
  • Brown on both sides and serve hot

4. Whole wheat buttermilk pancakes

Ingredients:

  • 3/4 cup all-purpose flour
  • 3/4 cup whole wheat flour
  • 3 tablespoons sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups low-fat buttermilk
  • 1 tablespoon vegetable oil
  • 1 large egg
  • 1 large egg white
  • Cooking spray
  • 3/4 cup maple syrup
  • 3 tablespoons butter

Directions:

  • Combine the flours, sugar, baking powder, baking soda and salt together in a large bowl
  • In a separate bowl, mix together the buttermilk, oil, egg, and egg white
  • Add the wet mixture to the dry mixture, stirring until just moist
  • Heat a non-stick griddle over medium heat and coat with cooking spray
  • Spoon about 1/4 cup batter per pancake onto griddle
  • Turn over the pancakes when the tops are covered with bubbles and the edges look cooked
  • Serve with butter and maple syrup

5. Lemon ricotta pancakes

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 3 1/2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup milk
  • 3/4 cup ricotta
  • 3 large eggs
  • 2 tablespoons lemon zest
  • 1/4 cup fresh lemon juice
  • 1 tablespoon butter, melted

Directions:

  • Preheat a griddle to moderately-high heat
  • Mix together the flour, granulated sugar, baking powder, baking soda, and salt until combined
  • Make a well in the center of the flour mixture, and set aside
  • In a separate bowl, whisk together the milk, ricotta, eggs, and vanilla until well blended
  • Add the butter, lemon zest and lemon juice to the milk mixture and blend until combined
  • Immediately pour the milk mixture into the flour mixture, and whisk just to combine
  • Pour 1/3 cup batter onto buttered griddle and cook until bubbles begin to appear on surface and bottom is golden brown, then flip and cook on the other side
  • Serve warm with powdered sugar
